- you can either add salt or sugar, depending if you want it sweet or savory. Or you could leave the batter "neutral" and then play around with your favorite fillings and toppings!
Instructions
Here's how to make vegan buckwheat crepes from scratch at home:
- In a bowl mix buckwheat flour, water and either salt or sugar, if using
- Whisk well until you get a smooth, pretty runny batter
- Place a non-stick crepe pan over medium heat and lightly grease it with light seed oil or vegan butter
- Pour ⅓ cup (or a ladleful) of batter on the pan, tilt the pan to make the batter expand. Alternatively use a spatula or a T-stick spreader to even out the batter
- Let cook for 3-4 minutes then using a spatula carefully flip it over and cook on the other side for another few minutes. Flip a couple more times if you want the crepes more golden brown
- Use up all the batter and enjoy still warm, topped and filled with your favorite ingredients!

- 1 teaspoon fine salt, for savory crepes (optional)
- 1 tablespoon sugar, for sweet crepes (optional)
