Ingredients
200gramswhole buckwheat flour (gluten free)
480-500 gramswater
1teaspoonfine salt, for savory crepes(optional)
1tablespoonsugar, for sweet crepes(optional)
Instructions
In a bowl mix buckwheat flour, water and either salt or sugar, if using
Whisk well until you get a smooth, pretty runny batter
Place a non-stick crepe pan over medium heat and lightly grease it with light seed oil or vegan butter
Pour ⅓ cup (or a ladleful) of batter on the pan, tilt the pan to make the batter expand. Alternatively use a spatula or a T-stick spreader to even out the batter into a thin layer
Let cook for 3-4 minutes then using a spatula carefully flip it over and cook on the other side for another few minutes. Flip a couple more times if you want the crepes more golden brown
Use up all the batter and enjoy still warm, topped and filled with your favorite ingredients!
