2 Ingredient Vegan Buckwheat Crepes (Sweet or Savory)

Easy and quick recipe to make vegan buckwheat crepes with just 2 ingredients! Gluten free, no eggs, without milk, but soft and flavorful!

Ingredients

  • 200 grams whole buckwheat flour (gluten free)
  • 480-500 grams water
  • 1 teaspoon fine salt, for savory crepes (optional)
  • 1 tablespoon sugar, for sweet crepes (optional)

Instructions

  • In a bowl mix buckwheat flour, water and either salt or sugar, if using
  • Whisk well until you get a smooth, pretty runny batter
  • Place a non-stick crepe pan over medium heat and lightly grease it with light seed oil or vegan butter
  • Pour ⅓ cup (or a ladleful) of batter on the pan, tilt the pan to make the batter expand. Alternatively use a spatula or a T-stick spreader to even out the batter into a thin layer
  • Let cook for 3-4 minutes then using a spatula carefully flip it over and cook on the other side for another few minutes. Flip a couple more times if you want the crepes more golden brown
  • Use up all the batter and enjoy still warm, topped and filled with your favorite ingredients!
