These vegan apple buckwheat pancakes are a great gluten free breakfast idea!
Made with few simple ingredients, they are dairy free, eggless and without refined sugar. Soft and comforting, these pancakes are even more delicious with sauteed cinnamon apples and a drizzle of maple or date syrup!
I find these buckwheat pancakes are the perfect comfort breakfast, with their rustic flavor, sweetened with apple sauce and cinnamon, they are super soft and starch free too.
Ingredients
I have tested these pancakes to make them easy to make and with as few simple ingredients as possible.
You will need:
- whole buckwheat flour, make sure it is labeled gluten free if you are gluten sensitive
- cinnamon powder, not only it adds a spice flavor, but it also sweetens the batter
- baking powder, which you can replace it with lemon juice and baking soda
- plant based and gluten free milk, I used rice milk, but soy or nut milks work great too
- apple sauce, this works as a sweetener and also as an egg substitute, making the pancakes extra soft
- fresh diced apple, dice it as small as possible so it's easier to spread evenly on the pancakes
- seed oil, coconut oil or vegan butter to grease the pan
- maple or date syrup to drizzle your pancakes and more diced apple to sautee with vegan butter and cinnamon and add on top!
Instructions
Here's how to make vegan buckwheat pancakes:
- In a bowl mix flour, cinnamon powder and baking powder
- Add the vegan milk and apple sauce and mix well with a whisk or hand mixer, until the batter is smooth
- Place a non stick pan over medium heat and lightly grease with either seed oil, coconut oil or vegan butter
- Add 2-3 table spoons of batter at a time to form the pancakes, add a handful of diced apples and let cook for 2-3 minutes, or until the bottom is golden brown
- Flip on the other side and let cook for another 2-3 minutes
- Proceed until you use up all the batter
- If desired, dice one more apple and sautee it with a tablespoon of vegan butter and a pinch of cinnamon powder
- Add on top of the pancakes and drizzle with maple or date syrup
- Alternatively enjoy the pancakes as is or spread them with jams (orange jam is the best pairing in my opinion!)

Ingredients
For the pancakes
- 200 grams whole buckwheat flour (gluten free)
- 1 teaspoon cinnamon powder (more if you love cinnamon)
- 2 teaspoons (homemade) baking powder
- 300 grams plant based, gluten free milk (rice, soy, nuts)
- 4 tablespoons apple sauce
- 1 apple, finely diced
- seed oil, coconut oil or vegan butter (to grease the pan)
For the toppings
- 1 apple, finely diced
- pinch of cinnamon powder
- 1 tablespoon vegan butter
- maple or date syrup
- jams
