seed oil, coconut oil or vegan butter(to grease the pan)
For the toppings
1apple, finely diced
pinchof cinnamon powder
1tablespoonvegan butter
maple or date syrup

Instructions
In a bowl mix flour, cinnamon powder and baking powder
Add the vegan milk and apple sauce and mix well with a whisk or hand mixer, until the batter is smooth
Place a non stick pan over medium heat and lightly grease with either seed oil, coconut oil or vegan butter
Add 2-3 tablespoons of batter at a time to form the pancakes, add a handful of diced apples and let cook for 2-3 minutes, or until the bottom is golden brown
Flip on the other side and let cook for another 2-3 minutes
Proceed until you use up all the batter, it should make 8 to 10 medium pancakes
If desired, dice one more apple and sautee it with a tablespoon of vegan butter and a pinch of cinnamon powder
Add on top of the pancakes and drizzle with maple or date syrup
Alternatively enjoy the pancakes as is or spread them with jams (orange jam is the best pairing in my opinion!)
