Vegan Apple Buckwheat Pancakes (Gluten free, No Refined Sugar)

Vegan apple buckwheat pancakes, a great gluten free breakfast idea, that is also dairy free, eggless and without refined sugar and starch!

Ingredients

For the pancakes

  • 200 grams whole buckwheat flour (gluten free)
  • 1 teaspoon cinnamon powder (more if you love cinnamon)
  • 2 teaspoons (homemade) baking powder
  • 300 grams plant based, gluten free milk (rice, soy, nuts)
  • 4 tablespoons apple sauce
  • 1 apple, finely diced
  • seed oil, coconut oil or vegan butter (to grease the pan)

For the toppings

  • 1 apple, finely diced
  • pinch of cinnamon powder
  • 1 tablespoon vegan butter
  • maple or date syrup
  • jams

Instructions

  • In a bowl mix flour, cinnamon powder and baking powder
  • Add the vegan milk and apple sauce and mix well with a whisk or hand mixer, until the batter is smooth
  • Place a non stick pan over medium heat and lightly grease with either seed oil, coconut oil or vegan butter
  • Add 2-3 tablespoons of batter at a time to form the pancakes, add a handful of diced apples and let cook for 2-3 minutes, or until the bottom is golden brown
  • Flip on the other side and let cook for another 2-3 minutes
  • Proceed until you use up all the batter, it should make 8 to 10 medium pancakes
  • If desired, dice one more apple and sautee it with a tablespoon of vegan butter and a pinch of cinnamon powder
  • Add on top of the pancakes and drizzle with maple or date syrup
  • Alternatively enjoy the pancakes as is or spread them with jams (orange jam is the best pairing in my opinion!)
