With this recipe you will get a moist and soft gluten free banana bread that:
- is made from scratch with few simple ingrendients (no gluten free commercial blends)
- contains no eggs, no butter, no added sugar, no oils and no xanthan gum
- uses rice flour and almond flour, but can use quinoa, oat or buckwheat flour
- it's also without yeast and low fat.
Ingredients
Here are the few ingredients you will need to make banana bread gf and vegan:
- one ripe banana, you will know it's ready to use when the peel is a warm yellow and with black dots
- brown rice flour, which you can replace with quinoa flour, oat flour or buckwheat flour
- almond flour or finely ground almonds
- potato starch, or other gluten free starch
- baking powder, or a homemade mix of baking soda and cream of tartar (or lemon, or vinegar)
- cinnamon powder, for a spice and extra sweet touch
- a gluten free plant based milk, like rice, soy or nut milk
- dairy free dark chocolate chips or chopped chocolate bar
Instructions
How to Make the Perfect Gluten-Free Vegan Banana Bread in few simple steps:
- peel a ripe banana, place it in a bowl and mashed it with a fork until it's smooth and creamy
- add the milk and whisk
- add starch, rice and almond flour
- add baking powder and cinnamon and mix everything until you have a smooth batter
- in a small bowl mix part of the chocolate chips with a teaspoon of rice flour until evenly coated (this will prevent the choco chips to drop at the bottom of the loaf while baking)
- pour in the loaf pan and sprinkle with more chocolate chips
- bake in the pre-heated oven and once ready let rest out of the oven for at least one hour before slicing
- store it in an airtight container to keep it soft for a couple days
Baking in grams

Gluten free Vegan Banana Bread (No Sugar)
Equipment
- kitchen scale
- bowl
- electric whisk
- spoon/spatula
- loaf pan
- parchment paper
Ingredients
- 1 ripe banana (ca. 100 grams)
- 200 grams gluten free plant based milk (like rice, soy or nut milk)
- 100 grams brown rice flour (or quinoa, oat or buckwheat flour)
- 100 grams almond flour or finely ground blanched almonds
- 100 grams potato or other gluten free starch
- 3 teaspoons baking powder
- ½ teaspoon cinnamon powder (optional)
- 50 grams dairy free dark chocolate chips or chopped chocolate bar + extra for decoration, if desired
- 1 teaspoon white rice flour
Instructions
- pre-heat oven at 180° C / 350 F
- peel a ripe banana, place it in a bowl and mash it with a fork until it's smooth and creamy
- add the milk and whisk to mix
- add starch, brown rice flour and almond flour
- add baking powder and cinnamon and mix everything until you have a smooth batter
- in a small bowl mix part of the chocolate chips with a teaspoon of white rice flour until evenly coated (this will prevent the choco chips from dropping at the bottom of the loaf while baking)
- incorporate the chocolate chips into the batter
- pour the batter in the loaf pan and sprinkle the top with more chocolate chips
- bake in the pre-heated oven for 25 minutes (poke the center with a toothpick, when it comes out clean the banana bread is ready)
- once baked let the banana bread rest out of the oven for at least one hour before slicing
- store it in an airtight container to keep it soft for a couple days or slice it and freeze it to enjoy in the future after heating it up!
