Gluten free Vegan Apple Cake

Deliciously soft gluten free apple cake, also dairy free and eggless, the perfect comforting dessert in the colder days!

Ingredients

  • 70 grams gluten free, white rice flour
  • 70 grams gluten free, brown rice flour
  • 70 grams gluten free potato starch (or other starches)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon powder (or more if desired)
  • 100 grams light brown sugar
  • 50 grams light oil (sunflower, coconut)
  • 100 grams plain, plant based yogurt (gluten free)
  • 50 grams apple sauce
  • 1-2 tablespoons gluten free, plant based milk
  • 2 medium apples, sliced thinly
  • brown sugar + cinnamon powder

Instructions

  • Pre-heat oven at 350F/175C
  • Lightly grease the baking pan and thinly slice the apples
  • Mix flours, starch, baking powder, cinnamon powder in a medium bowl
  • In another bowl mix sugar, oil, yogurt and apple sauce until smooth
  • Add the yogurt mixture to the dry ingredients and mix well
  • Pour the mixture into greased baking pan and decorate with apple slices
  • Sprinkle the top of the cake with brown sugar and cinnamon powder
  • Bake in preheated oven for 30 minutes or until the top of the cake is golden brown and a toothpick inserted in the center comes out clean
  • Let the cake cool down and if desired dust with powdered sugar and serve with a spoonful of vanilla icecream!
  • Store in an airtight container and a cool place.
