These gluten free vegan apple raisins cake squares are soft and delicious, perfect for breakfast or for a coffee break!

Ingredients
2tablespoonground flax seeds
6 tablespoonwater
100grgluten free brown rice flour
80grpotato or other gluten free starch
50grbrown sugar
1tsp cinnamon powder
2tsp cream of tartar *
1teaspoonbaking soda *
gratedzestof half a lemon
pinchofsalt
50grraisins
150grgluten free plant based milk
3small apples
Instructions
pre-heat your oven at 180°C/350 F
start by preparing the usual flax-egg (mixing the ground flaxseed with the water and letting it rest 5-10 minutes) and letting the raisins soften in some lukewarm water
mix the dry ingredients, then squeeze and drain the raisins, mix it with the dry part then add the liquid ingredients, the flaxegg and whisk it all together
cut two apples into small and thin pieces and add them to the batter
pour everything in a baking pan (I used a small rectangular one, lined with parchment paper), slice a third apple into thin wedges and use them for the decoration
sprinkle some pinenuts and brown sugar on top
bake for 25-30 minutes and let it cool down before slicing

you can replace cream of tartar + baking soda with baking powder
