These gluten free vegan apple raisins cake squares are soft and delicious, perfect for breakfast or for a coffee break!

Ingredients

  • 2 tablespoon ground flax seeds
  • 6 tablespoon water
  • 100 gr gluten free brown rice flour
  • 80 gr potato or other gluten free starch
  • 50 gr brown sugar
  • 1 tsp cinnamon powder
  • 2 tsp cream of tartar *
  • 1 teaspoon baking soda *
  • grated zest of half a lemon
  • pinch of salt
  • 50 gr raisins
  • 150 gr gluten free plant based milk
  • 3 small apples

Instructions

  • pre-heat your oven at 180°C/350 F
  • start by preparing the usual flax-egg (mixing the ground flaxseed with the water and letting it rest 5-10 minutes) and letting the raisins soften in some lukewarm water
  • mix the dry ingredients, then squeeze and drain the raisins, mix it with the dry part then add the liquid ingredients, the flaxegg and whisk it all together
  • cut two apples into small and thin pieces and add them to the batter
  • pour everything in a baking pan (I used a small rectangular one, lined with parchment paper), slice a third apple into thin wedges and use them for the decoration
  • sprinkle some pinenuts and brown sugar on top
  • bake for 25-30 minutes and let it cool down before slicing

Notes

  • you can replace cream of tartar + baking soda with baking powder
