A simple, tasty and fresh black rice salad with garlic shrimps and fresh veggies, perfect for picnics and BBQs

Course: Salad
Servings: 2 peopke
Ingredients
  • 1 cup black rice 250 gr
  • 1 cup ca. shelled shrimps
  • bell pepper / cherry tomatoes / spring onion / other veggies
  • parsley
  • 5 tbsp extra virgin olive oil
  • 2 cloves of garlic
  • 1 tbsp lemon juice
  • 1 tsp (apple cider) vinegar
  • 1 tsp dijon mustard
  • salt and pepper
Instructions
  1. cook the black rice in salted, boiling water (40 minutes)

  2. in a pan add 2 tbsp of olive oil, the crushed garlic cloves, sauté the shrimps and add the parsley


  3. chop the veggies in small pieces

  4. once the rice is cooked, drain it and rinse it with cold water

  5. prepare the vinaigrette dressing mixing 3 tbsp of olive oil, the lemon juice, the vinegar, the mustard and salt & pepper to taste

  6. in a bowl mix the rice, shrimps, veggies and vinaigrette

  7. add more parsley to taste
