50gramsdairy free dark chocolate chips or chopped chocolate bar+ extra for decoration, if desired
1teaspoon white rice flour
Instructions
pre-heat oven at 180° C / 350 F
peel a ripe banana, place it in a bowl and mash it with a fork until it's smooth and creamy
add the milk and whisk to mix
add starch, brown rice flour and almond flour
add baking powder and cinnamon and mix everything until you have a smooth batter
in a small bowl mix part of the chocolate chips with a teaspoon of white rice flour until evenly coated (this will prevent the choco chips from dropping at the bottom of the loaf while baking)
incorporate the chocolate chips into the batter
pour the batter in the loaf pan and sprinkle the top with more chocolate chips
bake in the pre-heated oven for 25 minutes (poke the center with a toothpick, when it comes out clean the banana bread is ready)
once baked let the banana bread rest out of the oven for at least one hour before slicing
store it in an airtight container to keep it soft for a couple days or slice it and freeze it to enjoy in the future after heating it up!
