INGREDIENTS (4-5 pancakes)
- 1 tbs ground flexseeds
- 3 tbs water
- 80 gr brown rice flour
- 20 gr potato starch
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 30 gr sugar
- 90 gr veg milk
- 1 tbs sunflower seed oil

For my very first post I decided to go for some quick and easy pancakes, my Sunday morning comfort-breakfast, when you want to cuddle yourself after a looong work, chores and errands-filled week. I know you know what I mean.
So, first of all mix in a cup the flaxseed with the water and let it rest until it gets a jello-ish look (15 minutes will do).
In the mean while you simply have to mix all the ingredients together until you have a smooth, not too liquid dough and once the flaxseed “jello” is ready, add it too. I added some dark-choco chips because I’m kinda addicted to dark chocolate and especially on Sunday morning I deserve some dark chocolate. Did I say dark chocolate?
So, uhm yeah, back to business. Now you can pour some dough on a pre-heated non-sticking pan, wait a few minutes until it gets bubbly, then flip your pancakes and let them cook another couple minutes.
And there they are, your fluffy pancakes to go with jam, fresh fruit, yogurt, anything you want really!
