INGREDIENTS
- 3 tbsp ground flaxseed
- 9-10 tbsp water
- 100 gr almond flour
- 100 gr brown rice flour
- 1 tsp coffee powder
- 80 gr potato starch
- 180 gr brown sugar
- 2 tsp cream of tartar
- 1 tsp baking soda
- 30 gr sunflower seed oil
- 180 gr almond milk
- 70 gr coffee
- almond flavour

So, today I’m sharing the quick and easy recipe for the coffee and almond cake I used as a base for this just as quick and easy “tiramisu” I posted a few days ago!
As per usual we start by mixing the ground flax seeds with the water and wait for it to become “gel-ish”. In the meantime we mix the dry ingredients, then add the liquid parts, the flaxseeds and the almond flavour. And that’s all folks, pour it in a baking pan and then into the oven it goes, 180° C for 35-40 minutes.
Besides using it to prepare my quick “tiramisu”, I love this cake for breakfast with a cup of barley coffee or with a cup of either warm or cold tea in the afternoon.
