Today I want to share with you my experiment with a gluten-free and vegan dessert, which kind of reminds of tiramisu (that’s why I put it between quotation marks, since I well know that traditional tiramisu is another thing and hard to be made just as tasty by using different flours for the base and replacing the dairy part with non-dairy products).
My boyfriend hadn’t had a traditional tiramisu in years and he was pretty happy with how this glutenfree vegan version turned out 😉
So, making this dessert is really simple, first of all you’ll have to make some coffee (decaf for me, unfortunately I can’t stand caffeinated coffee, missing out on the joy of having a boost in the morning when I feel sleepy, le sigh), once it’s ready and the whole house is filled with its wonderful scent you let it cool for a while, sugar it if you want to and then dip the gluten-free biscuits or cake pieces you have (I used my almond & coffee gluten-free cake and will share the recipe here asap!) in the coffee and start making layers: cake/biscuits, dairy-free almond yogurt (I used ALPRO), cocoa powder, chopped almonds and chocolate chips. And that’s it. You can eat it right away, though it’s definitely tastier after sitting in the refrigerator for a few hours 😉
